Smoked Mackerel Frittata

Ingredients
12 oz. smoked mackerel, skinned and roughly chopped
3 Tbsp. olive oil
1 Tbsp. butter
1 large onion, sliced
1 lb. potatoes, thinly sliced
6 eggs, beaten
4 cherry tomatoes, sliced
fresh dill, to garnish

Directions:

1. Heat oil and butter in a large non-stick pan. Add onions and cook 4-5 min, until soft.

2. Add potatoes and cook 10-15 min, until golden brown, stirring occasionally.

3. Add eggs and cook over a gentle heat 3-4 min. Add fish and tomatoes. Cook another 3-4 min.

4. Garnish with fresh dill and serve with warm crusty bread and a green salad.
